Chef Eric Hulme used a Cuban-style La Caja China, to roast the animal. My farmers market has cage free eggs (only kind I will buy) and they are $3.50 for a dozen. Good deal for fresh eggs from chickens that lived a decent life (vs cruelly caged). Thanks for your post and new blog.
